The Mai Tai is one of many rum-based cocktails, and although a classic, it has many variations on the theme. Based on spiced rum with coconut rum, or a mixture of dark and light rum, with its varied fruity elements, it makes a lovely refreshing drink that you can enjoy all year round.

Classic Mai Tai Ingredients

  • 45ml Spiced Rum
  • 25ml Coconut Flavored Rum
  • 1 tsp Grenadine Syrup
  • 85ml Pineapple Juice
  • 60ml Orange Juice
  • Ice Cubes

Fill a cocktail shaker with ice and add all the other ingredients. Then shake vigorously.

  • 1 ½ oz White Rum
  • ½ oz fresh Lime Juice
  • ½ oz Orange Curacao
  • ½ oz Orgeat Syrup
  • 3/4/oz Dark Rum
  • Lime Peel
  • Pineapple Spear

In a cocktail shaker add ice and all the ingredients except the dark rum. Then shake to mix.

Strain into a highball glass and pour the dark rum on top gently so that it floats. Then Garnish with the lime peel and pineapple and serve with a straw.

Party Mai Tai Recipe

Serves 16

  • 250ml Light Rum
  • 125ml Dark Rum
  • 125ml of 151 Proof Rum
  • 125ml Orange Curacao
  • 125ml Almond Flavored Syrup
  • 125ml Simple Syrup
  • 5 Freshly Squeezed Limes
  • 1 litre Fresh Orange Juice
  • Ice

Add all the alcohol, syrup, and the lime juice to a large jug and stir.
Pour into glasses over ice and top with plenty of orange juice, as this is quite a potent mix.
This recipe can be scaled up (or down) to suit the number of guests you have at your party while keeping the drinks flowing so that you can be the best host without spending all your time being a barman.
